  • 3/4 cup Ground Sausage- Italian flavor, cooked
  • 2 Mushrooms, cleaned and diced
  • 2 tablespoons Sweet, or red onion, minced
  • 1 clove Garlic, small, minced
  • 1 tablespoon Olive Oil
  • 5 Eggs
  • 1/4 cup Sour Cream
  • 1/4 cup Half and Half
  • 1/4 cup Feta Cheese, Crumbled
  • 1/4 cup Romano Cheese, shredded
  • 1/2 cup Cheddar Cheese, Shredded, and divided
  • 3 Spinach leaves, thinly sliced
  • 2 Cherry Tomatoes, thinly sliced
  • 4 Fillo Dough, Phyllo Pastry Sheets
  • 3 tablespoons Melted Butter


  1. Put Olive oil in a small pan and saute the mushrooms, onions, and garlic till just tender. Set aside to cool.
  2. In a medium bowl, mix together, eggs, sour cream, half and half, and cheeses. Stir in onion, garlic, mushrooms, Spinach and cooked ground sausage. Stir in tomatoes.
  3. Take 4 Fillo sheets and cut them half. Stack four halves onto each other, brush each with melted butter. Put stacked squares into prepared Pyrex bowls so that they form baskets.
  4. Scoop egg mixture evenly into the Fillo lined bowls. Place on a cookie sheet in oven and cover loosely with foil and bake 40 minutes. (foil keeps the Fillo from browning too quickly).
  5. When egg mixture is done, remove from oven and sprinkle with remaining cheddar cheese. Carefully remove from bowl before serving.
