Maple Mousse

Ingredients

  • 5 oz Egg Yolks
  • 3 3/4 oz Maple Syrup
  • 4 oz Maple Sugar
  • 2/3 cup Water
  • 1/4 oz Gelatin
  • 1/4 cup Maple Syrup
  • 2 cups Heavy Cream

Instructions

  1. Whip heavy cream.
  2. Heat egg yolks, 3 3/4 oz maple syrup, and maple sugar to 120 degrees. Whip until double in size.
  3. Dissolve gelatin in water.
  4. Add 1/4 cup of maply syrup to water/gelatin mixture after it blooms. Heat to 140 degrees.
  5. Whisk egg mixture into gelatin mixture. Fold in whipped cream.
