Cheesy Bacon/Potato Frittata Casserole
Cook Bacon – (about 30 slices for Lg batch, reserve some drippings to sauté onions)
1Lg or 2sm onion peeled and chopped (Sweet)
1-2. chopped garlic cloves
1lg bag of O’Brian potatoes (add extra ½ bag or more for double batch.
Chopped Ham ¾ cup
Caramelize onions 1st then add cloves of garlic
Brown potatoes in skillet with above mixture
1 and ½ eggs per person
1/2 cup of parmesan cheese
1 cup of cottage cheese
1 tsp Italian seasoning
Salt & Pepper (1/4 tsp each)
Mix above together
Then pour mixture over onions and potatoes.
(You can add artichoke hearts, ham &/or mushrooms to the onion mixture right before adding the egg mixture).
Pour everything into a quiche skillet - do not stir, use spatula to incorporate mixture into potatoes Let bottom set.
Top with 3 cheese blend and crumbled bacon over top of entire contents.
Place in oven at 350 degrees for 35-45 min.
COVER W/FOIL LAST 20 MIN TO PREVENT OVER-BROWNING
