Grease 2 round pie plates and line with chilies, and layer with equal amounts of cheese.
In a bowl, beat eggs with biscuit mix, milk, and salt. Pour batter over cheese and chilies. This will look like it is too much liquid, but do not worry it will reduce when it bakes.
BAKE: This recipe makes its own delicious crust. Bake at 350 degrees for 45 minutes to 1 hour or until puffed and firm. Serves 12-16 people. NOTE TO COOK: This can be made in a 9 X 13 baking pan or we like to use two 9 inch pie dishes (the baking time will be less).
Garnish the dish with cut rosemary in the middle of the cut pie, or garnish with your own creativity. Enjoy.
