Remove center core of the pineapple and slice into rings. Remove peel of oranges following the curve and remove as much bitter white pith as possible. Section the oranges.
To make the lime syrup: In a medium sauce pan combine sugar, water, and anise liquor. Bring to a boil over high heat, reduce heat to medium and cook until liquid reduces to 1/2 cup, approximately 25 min. When finished stir in lime juice and zest, pour over oranges.
In a small bowl stir the honey and yogurt together, and add the finely chopped ginger. Put your yogurt sauce in a squeeze bottle with small tip attachment.
Next, brush the lime syrup onto your pineapple slices and grill for 2 minutes on each side, rotating 1/2 way through. Place grilled pineapple on a plate. Add oranges and seasonal fruit in the center of the pineapple. Drizzle honey ginger yogurt over top, decorate and serve.
