Spinach Feta Quiche

Ingredients

  • 1 frozen piecrust
  • 1 tablespoon olive oil
  • 2 cups package of fresh spinach, coarse without stems
  • 4 eggs
  • 3/4 cup 1/2 and 1/2
  • 1/2 cup crumbled feta cheese

Instructions

  1. Rub crust of piecrust with olive oil.
  2. In a small bowl whisk eggs and 1/2 and 1/2. Place spinach in piecrust. Pour in egg mixture and top with feta cheese.
  3. Bake quiche on a baking sheet in middle of oven 15 minutes at 425 degrees. Reduce oven temperature to 350 degrees and bake until set, about 10 minutes.
