Port Washington Inn Gingerbread Cookies

Ingredients

  • 1/3 cup soft shortening
  • 1 cup brown sugar, packed
  • 1 1/2 cups dark molasses
  • 2/3 cup cold water
  • 6 cups flour (I use unbleached)
  • 2 teaspoons soda
  • 1 teaspoon salt
  • 1 teaspoon allspice
  • 1 teaspoon ginger
  • 1 teaspoon cloves
  • 1 teaspoon cinnamon

Instructions

  1. Mix shortening, brown sugar, and molasses thoroughly.
  2. Stir in water.
  3. Measure flour; stir in soda, salt, and spices.
  4. Add dry ingredients to moist ingredients; blend thoroughly.
  5. Chill dough so it will be easy to handle. This dough is espcially nice to work with and highly recommended for young cookie makers!

The Nelson Family has been enjoying these cookies since our children were very young. We found the recipe in the Sixth Printing of Betty Crocker's Cookbook, page 202, "Gingies". The description reads, "A happy tradition at the famous Girard College, Philadelphia, Pennsylvania. The boys hoard them...old grads long for them. An excellent dough for Christmas cookies." Our family agrees, as do our guests!! These cookies also make wonderful ornaments for the Christmas tree and have been known to reappear year after year...if they didn't get eaten first!!
