* Microwave or sauté chopped green onions in butter until tender. Combine all of the ingredients and mix well. Turn into a 3 qt baking dish sprayed with non-stick cooking spray. This can be prepared in advance and refrigerated overnight, covered with plastic wrap.
Bake 50-55 minutes at 325 degrees until firm. Let stand 5 minutes and cut into rectangles.
* I frequently use frozen hash browns that come with onions and peppers so you don’t need to add the first three ingredients. You can also buy the hash browns without onions and peppers.
