Sweet Pea Crostini

  • 2 cups chicken broth
  • 1 teaspoon red pepper flakes
  • 1 bag frozen peas
  • 1/4 cup fresh chopped mint
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup whipping cream
  • 3 oz finely diced prosciutto
  • 1 baguette sliced into 1/2inch thick slices
  • Extra virgin olive oil for drizzling
  • 3 cloves of garlic


  1. For the sweet peas: Warm the chicken broth and red pepper flakes in a saucepan over medium high heat until it boils. Add the frozen peas and cook until peas are tender. Drain the peas.
  2. Place peas in food processor with the mint, salt and pepper. Puree. Place in bowl and cool for 30 minutes.
  3. For the Crostini; bake in 375 degree over for 10 minuted until golden around the edges. Drizzle with olive oil and rub with garlic clove.
  4. To finish, whip the cream until stiff. Fold in pea puree. Top each crostini with pea puree and finish with diced prosciutto.Enjoy!
