Zucchini Bread

  • eggs
  • Canola or Safflower oil
  • sugar
  • grated zucchini
  • vanilla
  • flour
  • baking powder
  • baking soda
  • ground cinnamon
  • chopped walnuts
  • raisins


  1. Sift flour, baking powder and baking soda and cinnamon together
  2. Add to the first mixture. Mix well. Add nuts and raisins.
  3. Lightly grease loaf pans (2 large or 4 small).
  4. Fill and bake at 350 degrees for one hour.
  5. Let cool ten minutes then turnout on baking rack to cool completely.
  6. This bread freezes well.
  7. Grate unpeeled zucchini in Cuisinart
  8. Mix first six ingredients together in a large bowl.
