Zucchini Carrot Muffins

Ingredients

  • 2 Eggs
  • 1/2 cup Vegetable Oil
  • 1 tablespoon Vanilla
  • 1 cup Grated Zucchini
  • 1 cup Grated Carrots
  • 1 1/4 cup Sugar or Splenda
  • 2 cups Flour
  • 1 tablespoon Cinnamon
  • 1 1/2 teaspoon Baking Soda
  • 1/4 teaspoons Baking Powder

Instructions

  1. 1) Preheat oven to 400. 2) Combine eggs, oil, zucchini and carrots. 3) Add remaining ingredients and stir until moistened. 4) Place in muffin pan. Use muffin cups to make it easier. 5) Bake for 18 minutes or until lightly browned.
