Crustless Salmon Quiche

Ingredients

  • 1 and 1/3 C All-purpose flour
  • 1 and 1/3 C Milk
  • 2 tsp. Dijon mustard
  • 2 tsp. dried dill
  • ½ cup sautéed onions or leeks
  • 1/4 cup (1/2 stick) butter or margarine, melted
  • Approx. 4 oz. smoked salmon
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat oven to 350 degrees
  2. Spray 9-inch glass pie plate with nonstick cooking spray.
  3. In large bowl, beat eggs and cottage cheese until smooth.
  4. Add flour, baking powder, salt & pepper, mustard, and dill and mix well
  5. Stir in the shredded cheeses, melted butter, onions/leeks, and salmon; mix well.
  6. Pour into the prepared pan.
  7. Optional: lay tomato slices on top before baking (or asparagus or mini pepper rings).
  8. Bake until top just starts to turn golden brown and/or quiche is set -- 30-45 minutes.
  9. Allow to set about 5 minutes before serving.
  10. (Sometimes I make a yogurt dill sauce – plain yogurt, lemon, dill, garlic salt, pepper)
