Remove skin from chicken breasts and wash thoroughly with cold water. Pat dry and set aside on a platter.
Combine the maple syrup, honey, brown sugar, and EVOO. Grind one whole nutmeg into the mixture and stir thoroughly to make a glaze. Brush 1/4 of the glaze onto the chicken breasts, covering both sides. Reserve the remainder. Add, salt, pepper, and beau monde. Allow to stand for 15-20 minutes.
Grill chicken, starting with the breasts down, on high heat to seal the outside. Cook two minutes and turn. Brush on glaze. Cook two additional minutes. Reduce heat on grill to medium. Turn chicken and brush with glaze. Cook for 3 minutes, turn again, and repeat glaze. Repeat process, turning every three minutes, until you have reach a total cooking time of approx. 20 minutes.
Remove chicken and apply remaining glaze generously.
