1 & 1/2 Cups fresh Pumpkin - cubed into 1/2 in. cubes
3 - Large white Potatos - Peeled and Cubed
3 - Large Carrots - Sliced
2 - Cups Beef or Vegetable Broth
1 - 15 oz. Can of Chopped Tomatoes
1 - Teaspoon of Sugar
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
Heat the olive oil in a large saucepan over medium heat. Add the beef and cook until browned on all sides. Add onion and garlic in with the beef and cook until softened... about 3 to 4 minutes.
Add the remaining ingredients and bring to a boil over high heat. Reduce to a simmer, cover, and cook 45 minutes. Cool slightly and serve warm.
What a hearty and delicious Fall recipe. Easy, unique and tasty. Finish it off with a spoonful of sour cream on the top and some fresh chopped cilantro. Save a little bit of the pumpkin rind and place on the bowl or plate as a garnish. Serve with a couple pieces of hearty whole grain bread.
