Prepare a yeast dough, using flour, yeast, water, salt & oil
Cut the onions into rings and sweat them in a big pan in 3 tablespoons of oil, then allow to cool a bit. Cube the bacon, grate the cheese and whisk the cream and the yolks.
Roll out the dough, spread the onions on top, spice with pepper and spread bacon and cheese on top of the onions. Dash over all the cream & yolk.
Let the dough rise for 20 minutes and 50? C in the oven (with opened oven door).
Then heat the oven to 200? C and bake the pie about 30 minutes.
Traditionally, onion pie is served warm for dinner during the vintage season (September/October). We like to drink "Federwei?er" with it (this is sweet grape most, which is just starting fermentation).
