Triple Stack Sweet Potato Waffle

Ingredients

  • 1 and 1/3 C All-purpose flour
  • 1 and 1/3 C Milk
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 1/4 tsp freshly grated nutmeg
  • 2 tbsp packed brown sugar
  • 2 tsp pure vaillia extract
  • 2 Large Eggs
  • 4 tbsp melted butter
  • 1/4 cup maple syrup
  • 1 1/4 cup buttermilk
  • 1 cup roasted sweet potato
  • 2 tbsp melted butter
  • 1/4 cup packed brown sugar
  • 1/3 cup sugar
  • 1 large egg beaten
  • 2tbsp half and half
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 cups marshmellows
  • 2 tbsp cornsyrup
  • 3 large sweet potatos
  • 1 tbsp butter and olive oil mixed

Instructions

  1. folow wafflemaker instructions for making waffle mix can be thinned with water
  2. Filling
  3. in sauce pan on low mix remaining ingredientst heat and whip til fluffy
  4. let cool 10 min before cuttuing of skins
  5. For the waflles
  6. place roasted potatos mixture in bowl
  7. in a seperate bowl whisk flour, baking powder, baking soda,salt pumkin pie spice, cinnamon and nutmeg
  8. Beat eggs, vanilla and brown sugar
  9. to egg mixture add sweet potato mix well
  10. for sauce melt marshmellows on low heat with 2 tbsp corn syrup
  11. Roast sweet potatos
  12. cut 3 large sweet potatos in half
  13. place on roasting pan and bake at 425 degrees for 20 min. remove brush again and cook til soft approx. 20 to 25 min.
