Mary's Tater Tot Breakfast Quiche

  • 1 tablespoon Flour
  • 1 cup Milk
  • 1 tablespoon Butter
  • 6 eggs
  • 1/8 cup Mushrooms chopped (optional)
  • 1/4 cup Onion (chopped)
  • 1 cup Sausage, Ham or Bacon (cooked & chopped)
  • 2 dash Cayenne Pepper (optional)
  • cover top Tater Tots
  • 1 cup shredded cheese (I use sharp)
  • 3 tablespoons Milk


  1. Melt butter in small saucepan, and whisk in flour. Add 1 c. milk and whisk on low till rue consistency. Turn off heat and stir in cheese. Set aside.
  2. Beat eggs lightly, add mushrooms, onion, desired meat, 3 Tbsp. milk, & S&P.
  3. Pour cheese sauce over egg mixture and fold together. Pour this into an unbaked pie shell. Top with tater tots (I try to do this in a circular design)
  4. Bake in 350 degree oven for 40-50 minutes. Sprinkle top with more shredded cheese the last 5 minutes of baking. Center shouldbe set. Serve with biscuits and enjoy.
