Breakfast Quiche

  • 1 Pie Crust
  • 1 bag (20 oz.) Hash browns (frozen)
  • 4 Eggs
  • 2/3 cup Whipping cream
  • 1 (cooked) Ground pork/sausage
  • (4oz) (fine shred) Parmesan cheese
  • (4oz) (fine shred) Cheddar Cheese
  • 1/2 teaspoon Basil leaves (dried)
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Parsley flakes
  • 1/8 (if desired) Salt
  • 1 chopped fresh) Chives


  1. Heat oven to 350 degrees.
  2. Place pie crust in 9 inch glass pie plate.
  3. In large bowl, beat eggs and whipping cream with wire whisk until well blended. Stir in thawed hash browns and remaining ingredients, except chives. Pour filling into crust-lined pie plate. Spread evenly and sprinkle top with chives.
  4. Bake 30-40 minutes or until edge of filling is light golden brown and knife inserted in center comes out clean. Let stand 5 minutes before serving.
  5. You may substitute the sausage with 7-8 slices of cooked, crumbled bacon (about 1/2 cup) Serve with toast or bisquits and homemade jelly or preserves.
