Deconstructed Asparagus Frittata

  • Fresh, Organic Eggs
  • Organic Asparagus
  • Organic Fingerling or Yukon Gold Potatoes
  • Koronekes Extra Virgin First Cold Press Oil
  • La Chinata Smoked Paprkia Powder


  1. Cook whole potatoes in boiling, lightly salted water until fork tender. Drain on rack for 5-7 minutes.
  2. Thin slice potatoes and gently toss with a mixture of olive oil, salt, pepper, and smoked paprika to taste. Transfer to baking sheet or pan roast and turn until golden brown.
  3. Prep asparagus spears, toss with olive oil, and pan roast until crisp-tender.
  4. Prepare eggs to preference (sunny side, over light, poached, scrambled or fresh egg whites.
  5. Layer potatoes, asparagus spears, eggs, and garnish with trimmed asparagus
  6. Dust lightly with La Chinata Smoked Paprika.
  7. Enjoy!

Additional Tips

Not an asparagus fan? Prepare this dish substituting healthy organic spinach, or fresh avocado, and sliced organic tomatoes in place of asparagus. This dish may be topped with fresh Hollandaise Sauce.
