Sante Fe Omelet

Ingredients

  • 6 large fresh eggs
  • 1/2 cup mild fresh salsa
  • 1 cup sour cream
  • 1/2 cup artichoke hearts - chopped
  • 1/4 cup monterey jack cheese ~ shredded
  • 1/2 cup cheddar cheese ~ shredded
  • 1/2 cup parmesan cheese ~ grated

Instructions

  1. lightly cover glass pie dish olive oil or non stick spray
  2. cover bottom with thin layer of salsa
  3. layer with chopped artichoke hearts
  4. layer with three cheeses
  5. whisk eggs and sour cream until smooth and blended. Pour over cheese layer and bake at 350 degrees for 30 minutes
