Crustless Margherita Quiche

  • 1 and 1/3 C All-purpose flour
  • 1 and 1/3 C Milk
  • ½ cup Parmesan cheese
  • Salt and pepper to taste
  • 3 full sprigs of fresh basil leaves coarsely chopped
  • Chopped tomatoes (cherry tomoatoes perferred)


  1. Preheat oven to 325F. Spray pie plate with cooking spray. Combine eggs, sour cream, cottage cheese, Parmesan, salt, and pepper in blender. Blend until mixture is liquid smooth. Pour mixture into bowl and add fresh basil leaves, cherry tomato quarters, and cheese. Mix well. Pour into prepared pie dish. Bake until set, about 45-60 minutes. Remove from oven and let it fall slightly while it cools. Can be eaten hot, room temperature, or cold.
