Swedish Pancakes

  • 1 and 1/3 C All-purpose flour
  • 1 and 1/3 C Milk
  • 1 cup milk
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/4 cup of melted butter


  1. Add other items while blender is running-add melted butter last.
  2. Blend first 4 ingredients in blender on slow speed.
  3. Cook on electric fry pan at 325F on each side until set and very lightly browned (use butter or non-stick spray like PAM).
  4. Remove from pan, spread with butter and sifted powdered sugar and roll up.
  5. Garnish with powdered sugar, sliced berries, and a little whipped cream if you like.
  6. Serves 7-8.
