Baked Peach French Toast

  • 1 and 1/3 C Brown Sugar
  • 1 stick of butter
  • 2 tbl water
  • 1 and 1/3 C Milk
  • eggs
  • milk
  • vanilla
  • Bread slices, French Bread or Croissants
  • Fruit variety - frozen, canned or fresh


  1. On medium to low heat, boil for approximately 8 minutes, brown sugar, water & butter. Pour into greased 8x12 baking pan
  2. Add any variety of fruit on top of brown sugar mixture. I usually use frozen or fresh peaches, but fresh or frozen strawberries, blue berries, apples all work well, mixed or alone, fresh, frozen or canned.
  3. Cut french bread loaf in 1" slices (or cut Croissants in half lengthwise) and lay onto fruit. Any type of bread may be used. I like to use raisin cinnamon bread with apple slices for the fruit.
  4. Whisk egg, milk & vanilla and pour ontop of bread. Sprinkle with Cinnamon. Cover with plastic wrap and gentlypress bread into mixture to assist in soaking. Set in fridge overnight or for 8 hours.
  5. Bake at 350 covered with aluminum foil for about 20 minutes, then uncover and bake 30 more minutes or until golden brown & firm to the touch. Flip to serve and garnish with orange slice or matching fresh fruit. Egg cups with Turkey Bacon make a wonderful side dish!

Additional Tips

Cut turkey bacon in half, crisscross in well sprayed muffin tin, crack egg into muffin tin, sprinkle with herbs and spices to taste, bake in oven at 350 degrees for about 18-20 minutes. For special occasions, and for a bit of fun, use specialty shaped muffin tins. I have heart shaped and pumpkin shaped muffin tins.
