Scandinavian Fruit Soup

  • 2 cup raisins
  • 1/2 cup dried apricots, cranberries, white raisins, craisins & prunes
  • Fresh peeled apples, oranges or lemons may be added-cut into small pieces.
  • 1/2 cup sugar
  • 2 cinnamon sticks
  • 1/2 cup cornstarch
  • whipped cream


  1. Add fruit, sugar & cinnamon sticks to 6 cups of cold water.Cover and simmer for 30-45 minutes
  2. Mix cornstarch with cold water and add the mixture to the fruit mix. Simmer until the soup thickens.
  3. Serve warm with whipped cream.
  4. Keeps several days in the refrigerator.
