Ed's Cheddar Cheese Raisin Muffins

  • 1 and 1/3 C All-purpose flour
  • 1 and 1/3 C Milk
  • Seedless raisins
  • Salt
  • Large Eggs
  • Milk
  • Ricotta Cheese
  • Herbs (Penzys Fox Point Seasoning)
  • Fresh Herbs (parsley, dill & rosemary)
  • Paprika or (Penzey's Old World Seasoning)


  1. Preheat oven 400 degrees
  2. In large bowl, blend together flour, cheese, raisin, baking powder, salt, dry herbs and fresh herbs.
  3. In Medium bowl, beat eggs, melted butter, milk and ricotta cheese.
  4. Combine the two bowls blending until dry ingredients are just moistened.
  5. Spoon batter into muffin tin 3/4 full. Sprinkle top with paprika. Cook immediately or freeze in tin.
  6. Bake for 15 minutes. If frozen bake at 350 for 20-25 minutes.
