  • 1 and 1/3 C All-purpose flour
  • 1 and 1/3 C Milk
  • 1 bunch Cilantro
  • 1 jalapeño, sliced crosswise
  • 2 Tbs. Wyoming Whiskey (or bourbon)


  1. Mix together salt, sugar and paprika and rub into salmon.
  2. Place jalapeño slices on salmon and cover with cilantro.
  3. Place salmon with jalapeño and cilantro into large Ziplock bag, add Wyoming Whisey, and squeeze out excess air and seal.
  4. Place bag with salmon in a large baking dish, and cover with smaller dish, weight down (gallon of milk works well) and refrigerate for 3-7 days.
  5. Remove salmon, rinse briefly & dry. Slice thinly on a bias, and serve with bagels, cream cheese, onion, tomatoe. Garnish with sliced jalapeños, capers and cilantro.
