Preheat oven to 425 degrees and place two 7 inch cast iron skillets in oven to preheat. Remove from oven when hot and place butter bottom on pan swirling to coat.
Beat eggs and milk together then add the flour mixing again. mix in almond extract and melted butter last. (use electric mixer for best result)
Pour 1/4 cup of batter in preheated pan and bake for 10-12 minutes until pancake is brown and puffy. It will sink when removed forming large cup shape. It can be filled with fresh berries and or bananas. Sprinkle with powered sugar.
