Ingredients for Pimento Cheese: 1 cup sharp cheddar cheese, shredded
1 cup monterey jack cheese, shredded
¼ cup roasted red peppers, finely chopped (+1 tbsp of juice)
¼ cup grated yellow onion
1 fresh jalapeno, seeded & finely chopped
½ cup mayo
2 ounces of softened cream cheese
1 tsp salt
1 tsp black pepper
½ tsp granulated garlic
**2½ lbs of breakfast sausage of your choice**
Preparation For Biscuits (Be sure to keep all ingredients as cold as possible)" Sift all dry ingredients into a cold bowl. Make a well & grate in very cold butter, then cold buttermilk. Use a fork and combine ingredients until it resembles cottage cheese. (lumpy). Dust table with flour, and using a cold rolling pin roll dough out to ½ inch thick. Cut dough in half and layer on top of each other. Roll dough again and continue process 3 times. Dust cold biscuit cutter to cut out biscuits. Do not twist, just pull straight up. Bake @ 425 degrees 10 minutes. Brush with melted butter while they are still hot.
For Pimento Cheese: In a large mixing bowl combine mayo, cream cheese, grated onion, and juice from the roasted red peppers. Using your hands work all lumps out of the cream cheese and mix until smooth. Fold in remaining ingredients and mix well to combine and chill for 1 hour.
Assembly: Roll out breakfast sausage in patties twice the size of the biscuit to allow for shrinking, fry in cast iron and drain on paper towel. Cut biscuits in half and stack with a sausage patty and pimento cheese. Bake @ 350 degrees for 5 minutes to melt pimento cheese and warm the biscuit.
