Blueberry Muffins with Lemon Zest

  • 1 and 1/3 C All-purpose flour


  1. 350 oven temp. spray, muffin tins with non stick spray or use paper liners,
  2. In a large bowl cream butter, sugar, salt and lemon zest until light and fluffy. Beat in eggs on at a time. Mix flour and baking powder. Beat in flour mixture alternately with buttermilk, mixing just until incorporated. Fold in blueberries. Fill muffin tins 3/4 full. Bake for 30 minutes or until golden brown! Yummy
