Brunch Eggs

  • 4 Slices Ham or Canadian bacon
  • 4 oz Shredded Swiss cheese
  • 4 Eggs
  • 4 tablespoons Heavy cream
  • Salt & Pepper
  • 4 oz Grated parmesan cheese
  • Paprika
  • 2 tablespoons Chopped Parsley


  1. Butter 4 ramekins and place a layer of ham or Canadian bacon in the bottom of each. Sprinkle each with 1 oz of Swiss cheese. Break one egg over top of Swiss cheese, being careful not to break the yoke. Pour 1 teaspoon of heavy cream on top of each egg. Season with salt and pepper.
  2. Bake at 400F for 10 minutes. Remove from oven and sprinkle with paprika and 1 tablespoon of grated parmesan on each egg. Bake 5 additional minutes or until white is just set. Remove from oven and allow to stand for 5 minutes. Serve one ramekin per person, garnish with parsley before serving.
