Blueberry Cheese Breakfast Bake with Lemon Poppy Seed Curd

Ingredients

  • 1 and 1/3 C All-purpose flour
  • 1 and 1/3 C Milk
  • 1 1/4 cup sugar
  • 2 cups half & half
  • 1/2 cup maple syrup
  • 7 Tbs ground cinnamon
  • 3 Tbs vanilla extract
  • 3/4 cup fresh lemon juice
  • 1 Tbs lemon zest
  • 4 egg yolks
  • 1/8 tsp salt
  • 4 Tbs butter ( chopped )
  • 1 Tbs poppy seeds
  • 2 cups fresh blueberries

Instructions

  1. preheat oven 350 / grease 9x13 dish
  2. Add half of the english muffin cubes and spread evenly over bottom of dish
  3. Layer 1 cup of blueberries evenly over english muffin layer
  4. In large bowl beat together 20 eggs, 1/2 cup sugar, 1/2 cup maple syrup, 2 cups half & half, vanilla and 3 Tbs of cinnamon
  5. Pour half of egg mixture evenly over muffin and berry layers
  6. Sprinkle brown sugar and 4 Tbs of cinnamon over the top
  7. Add other half of cubed english muffins
  8. Top with remaining blueberries and egg mixture
  9. Pat down with spatula till break absorbs egg mixture
  10. Cover with foil and bake approximately 1 hr 20 min ( remove foil last 20 mins to slightly brown )
  11. Lemon Poppy Seed Curd 2.5 cups
  12. In a small saucepan, over medium heat, stir together lemon juice, zest, 3/4 cup sugar and salt until dissolved
  13. In medium bowl whisk 3 eggs and 4 egg yolks till well beaten
  14. Temper the beaten eggs/yolks by slowly pouring about 1/4 of the hot mixture into eggs while whisking constantly
  15. Add Poppy seeds
  16. Then add egg mixture slowly into hot mixture and whisk until thickened. Approximately 5 Minutes.
  17. Stir in chopped butter until melted
  18. Pour over individual servings of the Blueberry Cheese Breakfast Bake.
