Brie and Sausage Breakfast Casserole

  • Assemble this the night before.
  • 1- 8 oz. Brie round
  • 1 lb. hot pork sausage
  • Ciabatta or other crusty bread
  • 1 cup Parmesan cheese
  • 7 eggs
  • 3 cups heavy cream
  • 2 cups milk
  • 1 teaspoon dried sage
  • 1 teaspoon seasoned salt
  • 1 teaspoon dry mustard
  • Chopped green onions


  1. Whisk together eggs, heavy cream, milk, sage, salt and dry mustard, pour evenly over cheeses. If using ramekins divide evenly among the eight. Cover and chill overnight. Before baking sprinkle with green onions. Bake at 350 degrees for 40 minutes in ramekins, 1 hour in baking dish or until casserole is set. Serves 8.
  2. Trim the rind from the Brie and discard. Cut cheese into cubes and set aside. Cook the sausage in a large skillet, stirring until crumbled and no longer pink; drain. Tear about 1/3 of the loaf of ciabatta bread into cubes and place evenly in bottom of greased 9 X 13 inch baking dish or 8 individual ramekins. Make sure bottom is covered. (Reserve rest of loaf for another use.) Layer evenly with the sausage, Brie and Parmesan cheese.
