  • flour
  • baking powder
  • baking soda
  • salt
  • unsalted butter, softened
  • brown sugar, packed
  • sugar
  • vanilla extract
  • coconut extract
  • egg
  • white chocolate chips
  • toasted coconut
  • chopped walnuts


  1. Beat butter, brown sugar, sugar, vanilla and coconut extracts in large mixer bowl until creamy. Beat in egg. Gradually beat in flour mixture. Stir in morsels, coconut and nuts.
  2. Combine flour, powder, soda and salt in small bowl.
  3. Preheat oven to 375 degrees.
  4. Drop by rounded tablespoon onto ungreased baking sheets. Bake for 8 – 11 minutes or until edges are lightly browned. Cool on baking sheets for 2 minutes, remove to wire racks and cool completely. Makes about 3 dozen cookies.
