Poached Eggs with Avocado, Ham, and Cheese on Sweet Potato Biscuits

  • 1 and 1/3 C All-purpose flour
  • 1 and 1/3 C Milk
  • 2 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t. salt
  • 1/2 c. milk
  • 8 eggs
  • 1 avocado
  • 8 slices of ham
  • 8 slices of cheese


  1. In a large bowl, combine flour, sugar, salt, baking powder and baking soda. Whisk until combined.
  2. Cut butter in a flour mixture until coarse crumbs form.
  3. Pour in milk and sweet potato. Stir unter combined but not overmixeing.
  4. Drop batter onto parchment lined baking sheet making 8 cookies.
  5. Bake for 10-12 minutes at 425 degrees or until biscuits are slighly golden and puffy.
  6. While biscuits are baking, slice avocado, heat ham on a sklillet, and add cheese on top of it at the end to melt.
  7. Poach eggs in a frying pan filled with watervinegar mixture (1T white vinegar per quart of water). Keep water just barely at a simmer. One at a time, break eggs into a small bowl and gently slide into the pan of not quiet simmering water.Let cook for 4 minutes. Remove with slotted spoon and place in a bowl of room temperature water to stop cooking process but to keep warm while the seconed badge of eggs are poached.
  8. Slice biscuits, add avocado, ham/cheese, and top with poached egg.
  9. Serve 2 per person with sides of bacon or sausage and fuit or yoghurt.
