Wisconsin Cheese Curd and Brat Egg Bake

  • 1 loaf french bread, cut into 1 and 1/2 inch cubes
  • 6 bratwurst (brats); about 1 lb cut
  • 1 cup green pepper, diced
  • 2 cups mozzarella cheese, shredded
  • 3 Cups Milk
  • 1/4 tsp black pepper
  • 2 cups cheese curds
  • 9 eggs
  • 1/2 tsp garlic salt
  • 1/2 tsp dry mustard


  1. Brown brats in skillet, should be a darker brown to be sure brats are cooked through. Cut the skin and remove from sausage, then cut into 1/2 inch pieces. Spray 9 x 13 baking dish with cooking spray. Place half of cubed bread in baking dish. Cover with cheese, brats,and peppers. Top with remaining cubed bread. Beat eggs with milk and seasonings. Pour over bread, making sure to coat all cubes.
  2. Cover and refrigerate overnight or at least 4 hours. Cover and Bake at 350 degrees for 1 hour or until knife inserted in center comes out clean. Enjoy!

Additional Tips

Can use brat patties to save steps of removing skin after browning, or use pre-cooked brats to save a little time in browning.
