Baked French Toast Wedges

  • 4 Diced English Muffins
  • 1/2 cup Sugar
  • 3 Whole Eggs
  • 2 1/2 cup Milk
  • 1 tablespoon Cinnamon
  • 1/2 teaspoon Vanilla
  • 2 tablespoons Butter or Margarine


  1. Melt Butter in microwave for 1 minute. Spray 10 inch pie plate with non-stick cooking spray.
  2. Cut or tear English muffins into 1 inch cubes. Arrange muffins in a single layer in dish.
  3. Beat together eggs, cinnamon and sugar. Stir in vanilla, mixing well. Add half and half or milk and melted butter, mixing well. Sprinkle nutmeg over entire mixture.
  4. Cover and refrigerate overnight or bake immediately. Bake in 350 degree oven for 40-45 minutes. Cool 10 minutes.
  5. Cut into 1/4 wedges and serve with maple syrup or fresh fruit toppings.
