Sweet Potato Tart

Ingredients

  • 2 Large Sweet Potatoes, roasted
  • 2 Eggs
  • 3/4 cup Sugar
  • 1/2 teaspoon Ginger
  • 1/2 teaspoon Cinnamon
  • 1 teaspoon Vanilla
  • 1 2/3 cup Half & Half
  • 8 tablespoons Butter, melted
  • 1/2 cup Pecans
  • 1/2 cup Coconut
  • 1/2 cup Flour
  • 1/2 cup Sugar
  • 1/4 teaspoon Cinammon
  • 4 tablespoons Butter

Instructions

  1. Streusel: 1/2 C pecans 1/2 C coconut 1/2 C flour 1/2 C sugar 1/4 t cinnamon 4 - 6 T butter
  2. Tart: 2 large sweet potatoes, roasted 2 eggs 3/4 C sugar 1/2 t ginger 1/2 t cinnamon 1 t vanilla 1 2/3 C half and half 8T butter, melted
  3. Pulse first 5 ingredients in processor, add butter 1T at a time and pulse until crumbly
  4. Puree potatoes in processor and add remaining ingredients. Pour into tart pan and top with streusel mix and bake 350 for 30 minutes.
