Hollandaise Sauce

  • large eggs, yolks
  • lemon juice
  • hot sauce
  • Water
  • salt
  • freshly ground pepper
  • butter, unsalted
  • fresh parsley, optional
  • scallions, optional


  1. Place a stainless steel bowl over a pot of simmering water, being careful to not let the bottom touch the water.
  2. In that bowl, whisk together the egg yolks, lemon juice, hot sauce, and water until pale yellow in color.
  3. Remove the bowl from the pot. Whisking vigiriusly, add the melted butter, 1 tablespoon at a time, whisking until all the butter is incorporated.
  4. Keep warm until ready to serve over the egg, ham, and toasted English muffin. Sprinkle with fresh parsley and/or scallions if desired.
  5. Season with salt and pepper.
