Place tart pan on a baking sheet to prevent spills. Bake in a 400 degree oven for 25-30 minutes. Remove from tart pan when cool and serve.
Make the crust: Beat together softened butter and 3 oz. of the sugar in a mixer, add vanilla and when well combined mix in flour until it forms a dough. Press dough into a round or rectangular tart pan with decorative edges and a removal bottom. Use the same mixing bowl for the next step.
Make the Filling: In the same bowl, beat together the cream cheese and 2 oz. of sugar. Add one egg and 2 apples chopped into small chunks. Pour batter into crust. Do not clean the mixing bowl--use it for the next step.
Slice 3-4 apples and mix with the 2 oz. of sugar and add the cinnamon and nutmeg until coated with spices and leftover batter. Arrange in a decorative manner on top of batter. OK, now you can clean the bowl!
