Pumpkin Risotto with Maltese Sausage

Serves: 8Ingredients:
- 2 tbs. olive oil
- 2 Medium Onions
- 2 cloves garlic, finely chopped
- 1 red chili pepper seeded and finely chopped
- 1/2 glass white wine
- 2 tbs. chopped parsley
- 400 grams Maltese Sausage
- 400 grams diced Pumpkin
- 2 tbs. grated Pecorino Cheese
- 2 Cups Rice
- 3 1/2 Cups Hot Water
Steps:
- Peel skin off the Sausage and chop up meat coarsely
- Place oil in a pot, add the onions and sauté till soft. Add the garlic and chili and sauté for 2 minutes.
- Turn the flame up, add the wine and sauté for 2 minutes whilst stirring. Add the pumpkin and parsley, mix and cover pot. Sauté over a medium flame for 8 minutes. Stir occasionally.
- Add the sausage and the rice, mix, cover pot and simmer for 18 minutes. Stir occasionally.
- Bring off the fire, mix in 2 tablespoons cheese and leave to stand for 2 minutes.
Serve with the Pecorino cheese.
