Oatmeal Pancakes

Serves: 6Ingredients:
- 2 cups Buttermilk
- 2 cups Large Flake Oatmeal
- 2 Eggs
- 1/4 cup Canola Oil
- 2 tablespoons Splenda
- 1/2 cup Whole Wheat Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
Steps:
- In a large bowl, combine oats and buttermilk. Put in fridge overnight.
- In the morning, add beaten eggs and oil. Stir well. Add the flour, sugar, baking powder, baking soda and salt. Stir gently.
- Spray griddle with cooking spray and pre-heat to medium. Ladle one large spoonful or about 1/8 to 1/4 cup onto hot griddle. Cook until golden, about 1-2 minutes on each side.
- Make 16 to 20 pancakes
- Serve with maple syrup and butter, scrambled eggs, Canadian bacon, English muffins, homemade jams, fruit salad and yoghurt
