Oatmeal Pancakes

Total preparation time:  10 mns
Serves:  6

Ingredients:

  • 2 cups Buttermilk
  • 2 cups Large Flake Oatmeal
  • 2 Eggs
  • 1/4 cup Canola Oil
  • 2 tablespoons Splenda
  • 1/2 cup Whole Wheat Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt

Steps:

  1. In a large bowl, combine oats and buttermilk. Put in fridge overnight.
  2. In the morning, add beaten eggs and oil. Stir well. Add the flour, sugar, baking powder, baking soda and salt. Stir gently.
  3. Spray griddle with cooking spray and pre-heat to medium. Ladle one large spoonful or about 1/8 to 1/4 cup onto hot griddle. Cook until golden, about 1-2 minutes on each side.
  4. Make 16 to 20 pancakes
  5. Serve with maple syrup and butter, scrambled eggs, Canadian bacon, English muffins, homemade jams, fruit salad and yoghurt
