Stuffed Belgian Endive
Total preparation time: 10 minutes
Serves: 10Ingredients:
- 2 dozen Belgian endive leaves seperated
- 1/2 cup Crumbled Blue Cheese or Gorgonzola
- 1/4 cup Golden and Dark Raisins
- 2 Scallions
Steps:
- In small bowl place 1/2 cup of crumbled Blue Cheese
- Finely chop 1/4 cup of raisins and scallions
- Add to blue cheese in bowl and mix well
- Sprinkle approximately 1 1/2 tsps of cheese mixture in each endive leave.
May be served cold or spray filled leaves with olive oil and bake in oven @450 degrees for 4 minutes.
- Arrange on serving plate and serve. Good with a nice Cabernet or Pinot Noir. Handy to keep (well-wrapped) in the refrigerator for up to 4 days as a handy snack.
