Peach Spiked Crabcakes: Main Dish

Ingredients:

  • 3 lb Crab Claw Meat (well picked for shells)

  • 1 Roasted Red Pepper (diced and drained)

  • 1 Rib Celery (finely diced)

  • 1/4 cup Yellow Onion (finely diced)

  • 1 cup Sour Cream

  • 1/4 cup Lemon Juice (fresh squeezed)

  • 1/2 tablespoon Ginger (dried)

  • 1 teaspoon Mustard (dried)

  • 1/2 teaspoon Salt

  • 2 Eggs

  • 1/4 cup Cilantro (chopped)

  • 1 cup Fresh Ripe Peaches (chopped)

  • 4 cups Panko Bread Crumbs

Step 1:

Saute Onion and Celery till soft.

Step 2:

Mix all ingredients together except Bread Crumbs. Try not to break up Crab so as to have some larger pieces in cakes. Mix in Bread Crumbs.

Step 3:

Form desired size cakes.

Step 4:

Cook in nonstick pan with Butter for 3 - 4 minutes on each side.
