Peach Spiked Crabcakes
Total preparation time: 30 minutesIngredients:
- 3 lb Crab Claw Meat (well picked for shells)
- 1 Roasted Red Pepper (diced and drained)
- 1 Rib Celery (finely diced)
- 1/4 cup Yellow Onion (finely diced)
- 1 cup Sour Cream
- 1/4 cup Lemon Juice (fresh squeezed)
- 1/2 tablespoon Ginger (dried)
- 1 teaspoon Mustard (dried)
- 1/2 teaspoon Salt
- 2 Eggs
- 1/4 cup Cilantro (chopped)
- 1 cup Fresh Ripe Peaches (chopped)
- 4 cups Panko Bread Crumbs
Steps:
- Saute Onion and Celery till soft.
- Mix all ingredients together except Bread Crumbs. Try not to break up Crab so as to have some larger pieces in cakes. Mix in Bread Crumbs.
- Form desired size cakes.
- Cook in nonstick pan with Butter for 3 - 4 minutes on each side.
