The Best Stollen in the World! Traditional Christmas Bread

- 2 1/2 cups Flour
2 teaspoon Baking Powder
3/4 cup Sugar
1/2 teaspoons Salt
1/4 teaspoon Mace
1/8 teaspoons Cardamon
3/4 cup Ground Almonds
1/2 cup Butter
1 cup Cottage Cheese
1 Egg
1/2 teaspoon Vanilla Extract
1/4 teaspoons Almond Extract
2 tablespoons Rum
1/2 cup Dried Currants
1/2 cup Gold Raisins
1 tablespoon Grated Lemon Rind
- Combine the first 7 ingredients. Cut in the cold butter. I like to freeze the butter and grate it into the dry ingredient mixture. Mix the frozen butter flakes lightly with a fork or your fingers so as to not crush the butter flakes.
Blend the cottage cheese, the egg, the vanilla and almond extracts and the rum in a blender. Add the currants, raisins and lemon zest.
Stir the flour mixture with the liquid mixture. Knead on a floured board until smooth--maybe 8 turns. Cut the dough in half. Shape each loaf in a circular shape about an inch or so thick. Fold these in the traditional Stollen shape (Fold in half with the upper half just short of the lower half)
Place on a cookie sheet lined with brown paper. Brush with melted butter. Bake for 35 minutes at 325 degrees till the loaves are a golden brown and test done with a toothpick.(I start checking at 25 minutes)
- Brush with some more melted butter to which you have added a tablespoon of Rum. When cool, sprinkle with powdered sugar.
