Lentil Stew

Serves: 4Ingredients:
- 1 can Organic Lentils
- 28 oz Tomatoes
- 1 Leek
- 1/2 lb Organic Baby Spinach
- 1 Medium Organic Onion
- 1 tablespoon Extra Virgin Olive Oil
- 3 clove Garlic
- 1 teaspoon Cajun Gumbo
- 2 cups Gari
- 1 tablespoon Braggs Liquid Aminos
- 1 pinch Sea Salt
- 1 Bay Leaf
Steps:
- Sauté’ onions and leeks in olive oil seasoned with the Braggs until tender. Add washed spinach and simmer until spinach is almost tender.
- Stir in lentils, tomatoes, garlic, Cajun gumbo, and a pinch of sea salt to taste. Place Bay leaf in soup mixture, cover and allow to simmer on a low heat.
- Serve with Brown Rice or Gari (see recipee below)
Add 1 cup of boiling water to ½ gari*. Stir mixture together to create a thick mixture. Form small balls similar to dumplings.
- Drop gari balls into soup mixture and allow to simmer for another 15 minutes to allow gari to absorb seasoning in the soup.
