Belgian Mussels

Serves: 2Ingredients:
- 1 kg Fresh mussels
- 1/2 Onion
- 1 Carrot
- 1 stalk Celery
- 1 tablespoons Olive oil
- 1/4 teaspoon Pepper
Steps:
- Dice the onion, carrot and celery.
- In a pot over medium heat, sautée diced vegetables in the olive oil.
- Turn up heat to high, add the kilogram of fresh mussels and pepper to the vegetables. Stir together quickly and cover the pot.
- Check after 3 minutes if the mussels have opened. Once open, they are ready.
- Serve mussels with their cooking liquid in large bowls. Traditionally they are served with Belgian fries and mayonnaise.
