Mary's Tater Tot Breakfast Quiche

Serves: 6Ingredients:
- 1 tablespoon Flour
- 1 cup Milk
- 1 tablespoon Butter
- 6 eggs
- 1/8 cup Mushrooms (chopped)
- 1/4 cup Onion (chopped)
- 1 cup Sausage, Ham or Bacon (cooked & chopped)
- 1/8 teaspoon Cayenne Pepper (optional)
- cover top Tater Tots
- 1 cup shredded cheese (I use sharp)
- 3 tablespoons Milk
Steps:
- Melt butter in small saucepan, and blend in flour. Add 1 c. milk and cook on low till rue consistency. Add cheese and set aside.
- Beat eggs lightly, add mushrooms, onion, desired meat, 3 Tbsp. milk, & S&P.
- Pour cheese sauce over egg mixture and fold together. Pour this into an unbaked pie shell. Top with tater tots (I try to do this in a circular design)
- Bake in 350 degree oven for 40 minutes. Sprinkle top with more shredded cheese the last 5 minutes of baking.
Serve with biscuits and enjoy.
