Ham and Rice Casserole
Serves: 8Ingredients:
- 1/2 cup salad oil
- 2 medium onions, sliced
- 2 medium green peppers, chopped
- 2 cloves garlic, minced
- 1 cup chopped celery
- 1 cup raw rice
- 2 6-oz packages sliced ham, diced
- Salt and pepper to taste
- 2 cups stock or bouillon
- 2 cans pimientos, chopped
Steps:
- In a large skillet heat oil and in it saute onion, green pepper, garlic, celery and rice for 10 minutes. Add ham, salt and pepper and stock or bouillon. Cover and simmer for 20 minutes. Stir in pimiento.
