Apricot Breakfast Drink

Ingredients:

• 1 cup Vacuum-packaged dried apricots
• 1 1/2 cup Water
• 1/3 cup Sugar
• Grated rind of 1 lemon
• 1/2 teaspoon Dry ginger

Steps:

1. In a small saucepan combine 1 cup of vacuum-packaged dried apricots, 1-1/2 cups of water, 1/3 cup sugar, the grated rind of 1 lemon, 1/2 teaspoon dry ginger. Bring to a boil. Cover and simmer for 15 minutes, or until apricots are tender. Serve hot or chilled.
