Chili Cheese Quiche
Total preparation time: 10 minutes
Serves: 10Ingredients:
- 10 Eggs
- ½ cup of all purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon of salt
- 3- 4 oz cans of diced Ortega green chilies
- 1 pint of cottage cheese
- 1 pound grated Monterey jack
Steps:
- Suggested Pan: 13 X 9 glass
or 10 1 ounce ramkins
Spray pan with Pam
- * Melt butter
* Beat eggs lightly in a large bowl. Add flour, baking powder and salt- blend.
* Add melted butter, chilies, cottage cheese, and jack cheese and mix by hand, just until blended
* Pour into large baking dish
- Bake at 400 degrees for 15 minutes-reduce heat to 350 degrees and bake 35-40 minutes longer
- Cut into squares and serve hot, Enjoy!
